Disassembled Bellini Peaches and Prosecco

3 peaches (skin removed and cut into very small pieces)
lemon juice
4 tablespoons sugar
cognac
dry white wine
1. Put the peaches into a bowl with the sugar .
2. Pour on them a mixture made with 1/3 lemon juice, 1/3 cognac, 1/3 dry white wine.
3. Cool in the fridge for 2-3 hours.
4. After that strain and add a bottle of Prosecco.
5. Serve in a glass with a tbsp of the steeped peaches on the bottom and a slice of lemon to garnish.
